I've never used DVD Studio Pro or any Mac software really, so I can't comment on their features, but I do love Adobe Encore. It is very powerful, but just like After Effects, it does have a small learning curve.
The main feature that makes it so powerful and flexible, is it's integration with Photoshop and After Effects. Being able to edit menus in Photoshop and then animate them in After Effect and have it all integrate with Encore can open lots of possibilities.

Josh:
DVD authoring is something that I provide my clients. To date, I have been using DVD Studio Pro. But I noticed, sadly, that in the new FC Studio 2 release, all the programs were updated except DVD Studio Pro.
As much as I would love to stay with DVD Studio Pro, I am considering moving the authoring phase of my projects over to Encore CS3.
I hate to say it, but Apple dropped the ball for me on this one.
DVD Studio Pro is like my dad's Oldsmobile: it's old.
